1 Preheat oven to 350°F.
2 Mix together the graham cracker crumbs, sugar and butter.
3 Press into a 9-inch springform pan.
4 Mix cream cheese and sugar until smooth on low speed.
5 Add vanilla extract, eggs and cream of tartar. Mix on low speed for 3 minutes.
6 Cook until center is set about 50 minutes to 1 hour.
7 Let cool 2 hours before removing from pan.
